When we still have our little home bakery called “The Perfect Delights”, I was really pampered with a streaming supply of good and tasty pies. We had in our menu blueberry cheese pie, cheese pie, apple pie, apple cheese pie, blueberry pie, mango pie, strawberry and raspberry pies, pineapple pie, banana and lemon pies.  I loved apple pies — I was overdosed with it at that time — and I just really missed it! Huh, sigh!  Anyways, let me share with you below favorite recipe of mine.

CRUST:  1 cup flour, 1 tbs. sugar, 1/2 tsp. baking powder, 1/4 tsp. salt, 1/8 tsp. cayenne pepper, 1/3 cup ice water, 1 cup shredded cheddar cheese, 2 tbs. solid vegetable shortening, and 3 tbs. cold unsalted cut up butter.

FILLING:  1/2 tsp. cinnamon, 1 tbs. lemon juice, 2 tbs. flour, 1/2 cup sugar, and 2 1/2 lbs. Granny Smith or Pink Lady apples, peeled and thinly-sliced.

PROCEDURE:

1. CRUST: Combine the 1st 5 ingredients, cut in butter and shortening until mix resembles a coarse meal. Stir in cheese, sprinkle on water and stir until dough leaves sides of the bowl. Then shape it into a flat disk; wrap in plastic then chill for an hour.

2. FILLING: Mix all ingredients and spoon into 9-inch glass pie plate.

3. Preheat oven to 450deg. On floured surface, roll dough into a 13-inch round; drape over apples. Crimp edges and make 2 slashes. Bake for 20mins on a baking sheet with sides. Reduce the heat to 350deg and bake 20mins more. This preparation serves 8.
